Blueberry Chia Jam

(Makes approximately 1 cup of jam)

  • 1/2 tablespoon fresh-squeezed lemon juice

  • 1 tablespoon chia seeds

  • 1 tablespoon maple syrup or honey (optional)

Directions:

  1. Wash the blueberries and add them to a small saucepan. Simmer over medium-low heat for 5-10 minutes, smashing the blueberries with the back of a spoon or spatula as they soften. Tip: Be careful with your clothing, as blueberries can squirt and stain!

  2. Continue simmering and smashing until you reach your desired consistency. For a smoother texture, simmer for around 10 minutes. Then, remove from heat and stir in the lemon juice and chia seeds.

  3. Taste the mixture. If your blueberries weren’t in season and need a bit more sweetness, add sweetener to reach your perfect flavor.

  4. Allow the mixture to cool for about 10 minutes, then transfer to a container and chill completely in the refrigerator. For the best taste and texture, use within 7-10 days.

Notes:

  • Frozen blueberries can be substituted for fresh; just thaw them in the refrigerator before simmering.
